When you’re ready to cook, place the tri-tip on a well-oiled grate over a medium hot fire. Cook for about 15 minutes to a side, checking the internal temperature. Remove the roast from the grill when the internal temperature reaches: 125 for rare, 130 for medium rare or 135 for medium.
